Four Seasons Pastry Chef Javier Franco shared with me his simple recipe for delicious and nutritious energy bars that can be prepared at home in just minutes! Feel free to switch out the fruits and nuts with your favorites for a customized version. Super Energy Bars Courtesy of Four Seasons Resort Jackson Hole
Ingredients:
1 cup wheat bran, toasted
1 cup sliced almonds, toasted
1 cup rolled oats, toasted
1 cup shredded coconut, toasted
½ cup sesame seed, toasted
1 cup dried apricots, chopped
1 cup golden raisins
1 cup dried cranberries
1¼ cups smooth peanut butter
6 T honey
3 T nonfat milk powder
1 cup sugar
¾ cup light corn syrup
1 each orange zest
Method: Spread wheat bran, almonds, oats, coconut and sesame seeds evenly on a baking sheet. Toast in the oven at 350° for 5 minutes. Chop apricots to small cubes and mix with raisins, cranberries and toasted ingredients. In a large sauce pan, combine sugar, honey and corn syrup and bring to a full boil cooking for one minute over medium heat. Add peanut butter, nonfat milk powder and orange zest to sugar mixture and heat again until slightly boiling. Remove from heat and stir in dry ingredients. Transfer onto a baking sheet lined with parchment paper and roll out evenly or grease and roll onto a baking sheet. Let cool and cut into bars.
Yield: 1 sheet pan

Thanks for sharing the fun recipe Adi. I thought I might suggest using brown rice syrup instead for those that find corn syrup a bit of a turn off. The rice syrup will provide the same consistency and sweetness, but is a more natural alternative that has a lower glycemic index. It’s flavor is unique, kind of malty, but I think it’s yummy.
How could you make these bars without sugar and corn syurp. My diet doesn’t allow either of these.

thanks emily for the rice syrup idea! i’ll have to try that because i was actually really put off that corn syrup was included in the recipe. i think its a really bad substance and fuels americas health related problems and dependence on processed foods. i hope others think twice before using it as well.
as for not using sugar… im not sure due to consistency problems.. but i would recommend simple making that mix and putting it in a bag as a trail mix type snack.
I tried this and my kids loved it. It was a healthy and nutritious snack, that snuck in their fiber and protein. ^.^
I just thought I’d throw out there the possibility of Sucanat as a white sugar substitute in this recipe, I use it place of refined white sugar all the time and it works quite well. It is the dried juice of the cane plant and still contains the molasses content. Its definitely a better alternative, especially for baking. The Rice Syrup idea is great, I used that and the Sucanat and it turned out quite well!

I’m allergic to peanut butter… Is there a substitute?
If you can eat almond butter, I would recommend adding that instead of peanut butter. I personally prefer the taste of almond butter.

I can’t believe a site that is so focused on health would provide a recipe that included corn syrup! It is such a refined and overly processed food. I would suggest agave nectar for those looking for a substitute. I find it to be the best sugar substitute since it doesn’t affect the flavor of a recipe.
I think that this post has good information of protein bar.I think protein is a very important nutrient for our body that cannot be produced naturally. Almost all of us are aware of the importance of protein. You will have to make sure that you add protein in your diet either way.This post is really helpful for more people as i think.

Like others, I don’t have sugar or corn syrup in my diet. I don’t need the extra sweetness and don’t see how it’s necessary with the fruit involved. As for making the other ingredients stick together, Laura Bars to it with just raw dates and nuts. I’d love a recipe with less sweeteners Adi.
