Eggless Eggnog

With just a few ingredients you can create a vegan version of the traditional holiday favorite, eggnog. Spike it with your favorite bourbon if you’d like, or enjoy it plain.

Ingredients

1⁄2 c .almonds (soaked overnight)
1 c .coconut milk
3 dates (pitted)
3 T .agave
1 1⁄2. t cinnamon
1⁄2 t nutmeg
1⁄2 t cloves
1 t rum extract (optional, not raw, but completes the taste if you’re not using alcohol)
3 c .filtered water

Instructions

  1. Place all ingredients in a blender and blend until smooth.
  2. Strain mixture through a nut milk bag.
  3. Pour into cups and sprinkle with a tiny bit of nutmeg.
